All our lamb is produced on our own farms. April - July will see new season or spring lamb with its delicate flavour. As the year progresses and the lambs grow and mature, so the meat takes on a more mature flavour. Which ever you prefer you can be assured that it is local and reared naturally.
The majority of our lamb comes from mule ewes by Suffolk rams. This is a tried and tested combination that does very well on lowland farms producing a tender, good flavoured meat. Lamb is hung for 10 days to 2 weeks and our butchers can provide you with just the cut you require.
